Food, nutrition and cooking for residential groups
This course has been designed to provide a clear guide and many ideas for all aspects of catering on residential trips.
Course content
- an introduction to health and safety in the kitchen
- budgeting – how to set a budget and work to it
- shopping – types of food, how much to buy and where to buy it
- nutrition – a basic guide
- menu plans – some ideas for weekends and longer trips
- equipment – what you need and where to obtain it
- recipes – some ideas and how to cater for different diets.
Course objectives
- to provide advice on health and safety issues and risks in the kitchen
- to provide practical advice and guidance on menus, recipes, costings and shopping.
