A full introduction to the identification, skinning, gutting and cooking of a variety of game including rabbit, pigeon, pheasant and fish.
During the hands on course you will learn different cooking and preserving techniques including salting, hot smoking and cold smoking as well as different cooking methods to try and a dish to create.
